The Music Fonts picker does not highlight the chosen font (Dorico 6). So how can you tell exactly what font is in use? Since some fonts are very very similar, just eyeballing them is not a reliable method.
I forgo to mention the crucial point that it is Windows 11. Neglectful of me.
Let’s see if someone with Windows 11 can confirm.

On Windows (11 at least), it IS remembered, but the dialog isn’t scrolled such that the selected row is visible.

Normally, yes. But you can choose (non-SMuFL) fonts in Font Styles that Dorico will attempt to use in the score, and this won’t be reflected in the Music Fonts picker. (I didn’t say that you should, just that you can.)
And of course, even changing to a SMuFL music font in Font Styles doesn’t give you the option of automatically changing text fonts or using the font’s recommended engraving options.
