I noticed that the answers to my questions include a midi. I don’t use a midi. Is there another way?

Can you explain more about what you’re trying to do? You mention “the answers to my questions”, but this appears to be your first post.
Have you tried working through the First Steps guide?

This might (or might not) be relevant because you have not given us much information to help you specifically.
When you create a new project you see this:
with options on the left for different ensembles, groups of players. In Setup mode, you can add or delete players or sections of players as you wish. It might be a starting point for the instruments/players you want for your piece.
You do not need to use midi to input notes, there are other options, like your computer keyboard or diagrams of a piano keyboard on the screen or fretboard.
