Is there a way to make the held down notes (like the one highlighted) mean the same thing but not having them as bound together 16th notes? It just looks so messy this way…

If it was me, I’d put the A’s you’ve got in the lower stave in the upper stave and make them a 2nd voice.
Search for voices in the help files, I’m afraid I’m away from my computer now and can’t remember off hand which menu the option to swap voices is in, sorry.
When you’re entering notes, if you hit shift-v, Dorico will create a new voice on the stave you’re working on, then V will switch between them. The carat will show which voice you’re working in.
You can also switch voice colours on which will show you the different voices, so you can see what you’ve created.
