After playing it once, I have to press the play button again
You tell Dorico to repeat it the same way you would tell musicians – add repeat marks!

You could add a repeat bar at the end of the piece, and then in the Properties panel you can set it to repeat as many times as you want.
Or after you stop playback, you can start again from the same spot with Shift+Space.
