I am writing a multi flow piece and want the top voice to always appear at 75% the size, even when adding a new flow to the project. Is there a way to do this or do I have to manually resize it with every new flow? I want it to look like this for the entire document:
That is indeed a per-flow setting, there isn’t a way of setting it for a player throughout the project.
However, it’s preserved when you duplicate an existing flow: so you could add more flows by duplicating an existing one instead? You could keep a “dummy” flow in the project, with no musical content, but that player set to 75% staff size
I like the idea of duplicating a previous flow to keep the key signatures the same if needed. Making a dummy flow sounds like it would work much like a template, but within the project.

Another way to do this is to select the final barline of a flow and do Write>Split flow
