I Am Using Mac Cubase 10.5, With The Vienna Instrument Libraries (VEP7).
I would Like To Add About 12 Cubase Instrument Tracks For The Various Orchestral Winds, (And Then Do The Same For Brass, Strings, Etc).
Cubase Provides Information About Setting Up A 1st Instrument Track, But I Cannot Find Anything About Setting Up A 2nd Or 3rd Instrument Track.
I Am Trying To Connect The 1st Instrument Track To A Specific Woodwind (e.g., Flute).
But If I Try To Add A 2nd Woodwind Track (e.g., Oboe), My VSL Server And Woodwinds Instance No Longer Provide An Option To Connect A 2nd Wind Instrument.
Can Someone Tell Me How I Would Do This ?
Is There A Way To Set This Up Efficiently OR
Do I Need To Set Up 16 Separate Instances For 16 Instrument Tracks, And If So, How … Since I Cannot Connect The Woodwinds After The 1st Track.

If you want to use an instrument as a multitimbral add the Instrument as an Instrument Track, then add up to 15 MIDI Tracks with the output of the Instrument Track (you can select the MIDI Out in the Add Track dialog or after in Inspector). The MIDI Channels are set to 2-16 automatically.
I’m afraid, there is no specific section in the manual describing this scenario.
This is one very simple, well-explained way to do it, using Preferences.
Set Cubase to import data to the Instrument tracks … Preferences > MIDI > MIDI File > Import Options > Destinations > Instrument Tracks.

The Preferences, you mentioned, is Ankit importing MIDI File. If you are not going to import MIDI File, but you are going to create a project from scratch:
Add an Instrument Track (VSL, if I understand your use case).
Add MIDI Track.
In the Add Track dialog, set count to 15.
In the Add Track dialog, set MIDI Out to VSL Instrument Track.
