I would like to add space between the instrument name and staff in Dorico like shown here. I’m not sure how to do that.

for the distance, look at Engraving Options>Staff Labels>Horizontal position:
For the alignment: in your screenshot the staff labels are left aligned. You can obtain this changing the alignment of the Staff Labels Paragraph Style:
