Now, let’s assume I have to change all Ped__^__| (retakes) with Ped * Ped *.

If I change the Engraving Option from line to sign at end, all retakes are lost.
Well, theoretically they are still there if I change the style back, but all I have now is a long Pedal line with a * at the end.
You can split pedal lines (ignore the warning that you can’t split multiple lines; that’s no longer true)

It would be nice if this were available in Write mode as well, since splitting at a place where there is no music is currently impossibly and requires manual tweaking afterwards.
It’s already available in Write mode.
Lol… I trusted the documentation too much then 
The documentation says “If you are in Engrave mode, Graphic Editing is selected” because it’s something you can do in either mode; but if you happen to be in Engrave mode, your selection in the toolbox affects whether or not you can complete the steps.
You should also notice the addendum at the end of step 1 that clarifies “You can do this in Write mode and Engrave mode.”
