I’ve entered a passage where two-voice notation is necessary, but now whenever I start entering notes after that I get two voices of rest which is an extra thing to deal with. How do I end this?

If you turn on voice colours, you will probably see that you are entering your 2nd voice rather than the first. Just hit V and you will go back to using the other voice.
To fix notes already entered having the rests problem, just select the passage and again hit V.
Remember there is a difference between V (change voice, or cycle through multiple voices) and shift-V (create a new voice)
Thanks, but it’s not the case that I’m entering the second voice. The stem on the little Q-note cursor is going up, and the voice colors confirm I’m entering the upper voice. And when I press V on a bar with an unnecessary 2nd-voice bar rest, that just switches the voices.
Try selecting the last note in the second voice and turning on the Ends Voice property in the Properties panel.
Bingo!
That should only be necessary if there are already notes in that voice further down the score.
