I click on the dotted note icon, select a note with one dot, but when I try to enter the dotted note Dorico insists on entering two notes, so instead of a dotted quarter note I get a quarter note plus an eighth note. What am I doing wrong? I’m using Dorico Pro.
It will be to do with your Note Grouping in Notation Options (likely one of the first 4-5 settings from the top):
If you attach a screenshot of what you have then it will make it easier for us to diagnose.
If you want to keep your current settings, you can always use Force Duration to force a certain rhythm to appear. You shouldn’t need to do this very often.

I went through the various options for displaying dotted notes and after clicking everything that seemed to apply I was finally able to enter and displayed a dotted note. Thanks. Can I set this up as the default behavior for any new project I start?
Yes. Down the bottom of the Notation Options dialog, click Save as Default.
Be aware also that there are different note grouping options for notes followed by more notes vs followed by rests.
If you input a dotted note and it appears as a crotchet tied to a quaver, try simply inputting the next note you need to add, if you were already intending to follow that note with another note. Chances are, it’ll turn into a dotted crotchet on its own.
