I don’t need the Dorico Beep. How do you remove it from the mixer?

You can’t, I’m afraid. We may consider an extra filter button to choose whether it appears in a future update.

Would it also save a midi channel if beep was optional?

No, it wouldn’t make any difference. Each plug-in or MIDI device in the rack gets its own set of MIDI channels.
