How can I remove the letters ‘Alto saxophone’ on the left of the sheet? It repeats on every line over the whole page and eats the space of the bars. Also, how can I get rid of the ‘1. Flow 1’ at the top of the page?
Layout options> Staves and Systems> Staff Labels…
and
Layout options> Page Setup> Flows… (never show flow headings)
@Janus is right, but I suspect that you have set up a project with just a single player, and you are looking at the full score layout. Try looking at the alto sax layout instead.
It is common for scores to label each staff, which is why Dorico defaults to this. But for parts, it’s common for the instrument name to appear once, in the upper left corner of the first page, and then not on each system.

That’s what part layouts are for. If you want, you can tell your score layout to use the part template set, but I think you may as well just use the part layout, which is already set up the way you want it.
