Hi @callmecooney, please don’t edit the frames and/or tokens directly on the layout!: this creates overrides and is very inefficient for many reasons.
Instead you need to edit the corresponding Page Template used by that page (in your case the Default page template, which is used by page 2 and following), and possibly the First page template if your title has multiple lines for example.
First of all you could write your long title into the Project>Title field of the Project Info dialogue (also on multiple lines: see screenshot) and the short title in an unused field (I used the Copyist field for example):
Then you can edit the First Page Template (in case you need to adjust the size and position of the text frames to accommodates the multiple lines Title. And also lower the upper edge of the blue Music Frame):
Then you edit the Default page template, and substitute the {@projecttile@} token with the {@projectcopyist@} token (If you double-click the frame and enter so the text edit mode, you can right click to choose among the many available tokens):
If you want to customise size and other settings (for the text that is generated in the header thanks to the token), you can customise the Header Paragraph Style:
Result:
Just keep in mind that you have a Page Template set (which contain First and Default) for the Full Score and one **Page Template set (**which contain First and Default) for all the Parts: if you switch to a part layout, you will see the set changing to Parts. You need to edit the page templates twice: once for the Full Score and once for the Parts (they are independent):

Here the example Dorico file:
