Sometimes I manually delete unwanted rests and Dorico puts them back when I reopen the project. It may be very correct musically but I want to override it.
Is there an option for this?

I have not experienced that. For me, removed rests remain removed.
Can you share a file that exhibits this behaviour?
@Janus for IP reasons I am unable to share the file. Funny, this has happened to me with Dorico on various projects for a long time. Didn’t I read somewhere once that Dorico does some automatic cleanup/processing on exit? Maybe @Lillie_Harris would know?
Can you provide a screenshot, showing voice colours, at least?
Dorico will remove any unused voices from the document, so that when you open it, only voices with notes in will exist (and they will be in consecutive order so if you created notes in Voice 3 but not Voice 2, they will be in Voice 2 next time.)
Similarly, if I change an immediate dynamic to be parenthesized, Dorico will revert it next time I open the project. The only type of correlation I find is it happens after I respond to a proofreading warning, e.g., “mp repeated”. I’ll parenthesize the offending dynamic but the warning appears next time I open the project and the parenthesis are gone - strange.
