I'm trying to create a Gm7sus4 chord symbol

I’m having the same problem. If I type in m7sus with any root, Dorico changes it to 7sus4. Is there some way maybe in Edit chord symbol components where I can create the m7sus4 chord symbol?

I just tried to create one under Library->Chord Symbols, but it also got changed to 7sus4. Do you mean it should resolve to a minor chord? Otherwise, the third is omitted anyway, making the notes the same as 7sus4.

A minor 7th chord cannot have a sus4 since suspended chords replace the 3rd of a chord with the 4th. If you want a min7 chord with an added 4th, I would use a symbol like Amin7(add11), Amin7(11), or Amin7add11. If you want a chord with a minor 7th with the 4th replacing the 3rd, all you would need is a symbol like A7sus or A7sus4.
