Is it possible to import Engraving Options? If so, does anyone have one I can import (as a starting point)?

There are lots of ways to import different kinds of settings in Dorico. It sounds like you’re asking for someone to share their own personal settings; some users may be comfortable with that, others not so much. Personally, I think the Dorico defaults are pretty good, as a starting point, and then you can experiment to see where you’d like to make changes.
You can set winged repeats under Engraving Options > Barlines > Repeats > Wings on repeat barlines; if you click the Save As Default button, this will be your default for all future projects.
For your default music font, change the font in the current document by going to Library > Music Fonts. Then go to Font Styles > Default Music Font. Click the star button in the lower left to save this as your default. Do the same with Default Music Text Font and Default Text Font.
You can set key commands for most things in Dorico by going to Preferences > Key Commands. I think the question here is not so much, “What have other users assigned key commands to?” as, “What action do I frequently take that I’d love to have a quicker way of invoking?”
