Hi. In page view, the lyrics spacing looks normal. In galley view, the lyrics overlap the notes. Can you change the settings? Thank you.
Fixed it. Adjusted Engraving Options > Lyrics > minimum distance from staff.

Go to Layout Options->Vertical Spacing->Galley View.
Increase the minimum staff gaps to something like 180% for example:

I am working on a video project that requires the moving music to be placed under/over the performer performing the music.
It is a mallet piece and the stickings were entered in as lyrics. To make the most sense and retain the flow of the music, doing this galley view is the best option. However, due to how low some of the notes go, I have to have SO much room between lyrics and staff that it begins to take more room than the video team would like. Is there a better solution to this? Increasing galley view minimum staff gap to 200% did not move the lyrics at all.

In galley view there is generally no automatic spacing as in page view.
If you use lyrics, they will live on the same line, anyway, so it is not the best solution, if you need to visualise them in Galley view (due to the low notes).
Did you try instead, using (custom) playing techniques instead? You can select chunks of them right click, and group them (and hide the connecting line), so that the baseline will be the same between the l and the r:
