Although i know it is very tedious / time consuming, i would highly recommend de-installing / removing EVERYTHING related to Cubase 10.5,
before installing V11.
This workflow, in my experience, as a longtime cubase mac user, saves you the most from experiencing issues in V11 later on
and the V11 install will then go flawless (i assume).
Needless to say that this wouldn’t be necessary if the upgrade process would be rock solid and without hickups, like you experience.
HD > users > you > Library > Preferences.
Look in the Preferences folder for folders and files with “Cubase” in their name or “Steinberg” in their name.
