The Roman numerals for the names highlighted in yellow should be visible, but after I added an instrument change, a number appeared next to the key signature and the display has changed. How can I fix this?

The labels you have boxed in yellow are player names rather than the instrument names.
Without seeing your project, I can almost guarantee that you have set your staff labels to display instrument names (the default) rather than player names for those staves. (I assume you have music in Corno (Re) I and Corno (Re) VII)
