I work with the french version of Dorico and the intruments names appear in french. For example: When I write for clarinet irs written “clarinette en Bb” and I want to writte “Bb clarinet”… I tried to go on engrave languages options but it dont work 
!

Welcome to the forum, Filipe. Changing the language of instruments in Engraving Options is, unusually, not a retrospective action, i.e. it only affects the instruments you create subsequent to the change, not any existing instruments in your score. You can add new players and instruments after changing the option, then copy and paste the music from the old ones to the new ones, before deleting the old players and instruments.
