You mentioned 192gb of RAM so pay double attention on which modules you will take, it is always wiser to populate only 2 ram slots than 4 in terms of stability xmp etc etc (you have plenty of articles on this) so i advise you to explore details for RAM especially if you aiming on that amount.
Other thing for big orchestral templates is to use Server with vienna since those xeons are much “forgivable” with lots of ram, even some old xeon generations will be enough and you probably have them plenty second hand.
In terms of E-cores users complain that they had some problems but with recent windows updates it seems that this is improved and fixed. You have article on steinberg’s knowledge base. But logically future versions either windows or cubase will take care that this works to full potential.
