Pretty lost here and there’s no up to date videos out there on how to do this with Cubase 13

You can do the very same thing in Cubase 13. You can use X Touch Compact as Mackie Control Device.
Or you can use one of the Mackie Control MIDI Remote emulations. Then the process is also simple, just import script.

Thanks. I realized I was hitting a plus sign instead of a dropdown arrow in configuring this. Which was getting me lost. I did some further searches and found that someone else was doing the same thing.
