Is it at all possible to assign a keyboard shortcut to change a highlighted notehead(s) to a certain shape? So far I have just been using the drop-down menu (i.e. right click, “notehead”) but wondered if there is a faster way…

In Edit > Preferences, you can set up key commands for specific notehead sets.

To clarify, I made a new custom notehead set for empty (absent) noteheads. It shows up manually when I right click on a note but it does not show up under “key commands” for the shortcut. Is there a way to reconcile this?

Since key commands are application-wide, you can only assign a shortcut to something that is available globally. In the Library > Notehead Sets dialog, if you click the star button to make your new set available as a default, then it will show up in the key commands section. (You may need to restart Dorico, or at least close and reopen the Preferences dialog.)
