In the Key Editor, I can hold Alt to choose the note length before entering notes.
However, this doesn’t seem to work in the Score Editor, and I can’t find any equivalent option in Key Commands.
Is there a way — shortcut or setting — to select the note duration/length with a shortcut before inputting notes in the Score Editor?
I checked the Key Commands dialog but didn’t see anything related to this.
This is not available in the Score Editor. You could make a Logical Editor Presets to set dedicated length to the selected note (like 1/16 length, 1/8 length, 1/4 length, etc.). Then, you can insert the note in the Score Editor and call the wanted Logical Editor Preset to set the length.

According to the Score Editor Manual, you must click a note rhythm in the toolbar before entering notes.
So no key command is listed there, which might account for how @Martin.Jirsak answered.
However, it’s also possible to activate the pencil tool (with a key command) and use the Set Insert Length key commands for this, which isn’t explicitly documented.
It would be amaaazing if the note length for the step entry inside of the score editor could be linked to the quantize value. That way I could use the same key commands (1-8) for both.
I think we’re still in the early stages of the new Score Editor, which I’ve been waiting for for a long time. I’m glad Steinberg finally decided to phase out the old one, since it was extremely unstable.
