I wonder if I can «split up» a percussion kit so that it is shown as a kit in the score, but so that I still can have a separate part for each of the instruments?

In Layout options, you should be able to choose whether you want a five-line staff (kit) display — for full score, a line display (for parts). Make sure you select the appropriate layout at the left of the Layout options to make that happen!
However, if you want to make separate parts for each “member” of the kit, you will have to add players and copy/paste each instrument (from a single line layoyt) into their dedicated players …
