Is there a way of labelling a 3 staves organ in the middle - so to say in front of the middle -staff?
Is it the default 3-staff organ? If so, instead of extending the brace in engrave mode, remove the bracket change and edit the instrument definition like this (assuming you want the brace to cover the 3 staves):
