I have a piece with 3 eighth notes in the pick-up measure and want to end the piece with 2 quarter notes and a eighth note. When I change to 5/8 time signature, it display the notes differently (see picture). Is there a solution to this?
Before you change the final bar, select the bar and just hit (o) to force duration on the notes. Then when you turn it into a 5/8 bar the notation will be retained.

In addition to @Janus 's answer, you could also enter the time signature as [2+3]/8
That tells Dorico that you want to beam the measure as 2+3, which will give you the result you want.

And in addition to @Janus ‘s and @asherber ’s suggestions, you could just select the first rest after your last note, press shift-b then type final and finish with enter.
This will let Dorico insert a final bar line and chop off the unnecessary bit of the last bar.
