Hi, I would like to create the same type of layout (incipit in the center and remaining scores [clip 1] or a single bar in the center of the page [clip 2].
I thought I saw a tutorial about it but I can’t find it anymore.
Do you know how I can solve the problem?

You have two options:
Create a second flow, put just that single measure’s worth of notes in it, and then make a custom music frame with just that flow at the top of the page. (Remember that “flows” is a deliberately vague term which means that you can put any amount of music in a flow as needed.)
Put a system break after that first measure, and then use the note spacing tool to nudge the left and right sides in.
