I’m wondering if it’s possible to “lock” the key editor on the current track/region view whilst recording another instrument. I usually sketch on a piano or something like that, then layer other instruments in, and it’d be great to have the “sketch” track visible the whole time. As it stands, Cubase will switch the key editor view to the track I’ve just recorded.

The 1st way could be to disable Link Editors in the preferences. Then you can open multiple Key Editors for multiple tracks/parts. They are not linked.
The 2nd way would be to use In-Place editor for the track, which you want to observe.
