For example, I don’t want:
Flute 3 (& Piccolo)
I want:
Flute 3
(& Piccolo)
Though I’d want to right-align the words.

If it is just a “label change” to the Staff Labels, then just change the name of the Instrument in Setup mode.
Obviously, if these are separate instruments/players, then things are more complex.

I’d recommend using a player name for this, rather than the instrument name (at least in the first instance).
You can write the name you want with line breaks out in eg a text editor, then paste it back into the Edit Player Names dialog.
