Hello! I have yet to find a solution or answer to this question.
The Project window seems to be limited to about 370 bars. I am working on a project that is almost 600 bars but Cubase 12 Pro does not allow me to add any more. I have more than enough storage space so I don’t think that is the issue. Has anyone else encountered this? Is there a limit to how many bars can be in a project? That doesn’t seem right to me.

It actually doesn’t let me add any.
I’ve tried using insert silence, using the tempo and signature tracks to process and nothing seems to be adding to the timeline.
Try going into the Project Setup and set a larger project duration value.
If that doesn’t work, rule out prefs problems by starting in Cubase Safe Mode with disabled preferences

Where do you want to add the bars? If you want to do so at the end of the project, change the Project End in the Project Setup [Shift + S] dialog, please.

Just to complete the answer, if you would record (Audio or MIDI) and you would reach the border, Cubase would extend it automatically.
