Merging audio tracks - where in manual?

One of the things I really want to learn in Cubase is how to combine one audio track with another so that I can jump in and out of good takes and end up with one, master, good take from, say, 4 or 5 takes.

I understand that I obviously have to select at which point I’d like one track to take over another but how do I do that and have it fade out the original track?

Again, my basic understanding is that the software will do a super quick fade-out (one track) and fade-in (second track) so that the join is as seamless as possible.

Can someone point me in the right direction in the documentation, or a good online guide or something?
