How do you change the meter (for a measure or two) in the middle to apply to those measures only? Without changing the meter for the rest of the measures. Thanks for your help

First insert an explicit time signature change at the bar where the rest of the measures begins.
Then enable insert mode (by pressing I) if the new time signature to be inserted has more beats than the current, insert the new time signature, and then – if necessary – delete needless bars with SHIFT B -x where x is the number of bars.

Hi @ericsessler, adding to @Vadian’s suggestion, another way would be to use Insert Mode in its 4th scope (Global Adjustment of current bar) [long press the icon to choose between the 4 scopes]. Here an example: starting from 4/4, Dorico automatically adjusts the current bar to 5/4 when you add a quarter, or adjusts the current bar to 3/4 when you delete a quarter (the returning 4/4 is also automatically added):
