Could it be you’ve created a custom score order, and made that a default?
For sorting the Players, make sure you have the Orchestral sorting, clicking longer into the icon in Play mode:
For the global bracketing make sure you have selected the desired bracketing in Layout options (but Piano should always show a brace; then see the next point):
Also make sure you don’t have any manual Bracket and Barline changes: if you see some brown signpost, select them and delete them:
As a final check, see if you maybe changed the standard bracketing in your instrument definition for the Piano (if it shows a Bracket instead of a Brace for example). If it doesn’t look like in my screenshot, reset the instrument using the circular arrow at the bottom left of the Edit Instrument dialogue:
