So, I like my track channels in the mix console to be narrow. So I press G until they become narrow. Everything is great until i open the mix console again (F3) it returns to old wide channels. Any fix? I tried creating a new configuration, tried new workspace. nothing helped.

There was the “optimise Channel size” feature in the MixConsole. This might happen, the Channel Size changes when you close and reopen the MixConsole. Because it decides it would be more optimal, if the size would be a bit different.
This issue has been fixed in one of Cubase 9 or Cubase 9.5 update, if I remember right.
