I know there is a setting that locks the main output channel to right hand side (and makes it always visible) in the MixConsole. However, I can’t, for the life of me, find it. Can someone help?

enable “Channel Selector” in the setup window layout, click on the “Zones” tab. There you’ll find two dots before each track. Enable the one next to the Stereo Out to lock it to the right hand side of the MixConsole window.
