Is there a way to add a new channel to an existing mixer view set without it being added to all of my other view sets? Currently when I do this I have to go into all of my other view sets and remove the new channel.

No, it’s not possible. For the security reasons, new Channel is always present in all Views until you remove it manually.

This mean, you cannot make a hidden track. You always get a visual feedback about a new track to ensure, you know about the track.
