Look at this option in Engraving Options > Rests > Multi-bar rests > Spacing.
In Engrave mode, you can also adjust the width and position of the H-bar in Properties > Multibar Rests (make sure you select the rest first).

Where can I find Properties > Multibar Rests? Can it be applied to a specific part only, not the entire piece?
Properties is the lower panel . Press ctrl/cmd-8 to open it. Select the multi-bar rest and there will be a section there called Multi-bar Rests. Check out the various properties in there to see which one(s) suit what you are trying to achieve. Any changes you make in Properties apply only to what is selected.
