I may not have picked up the larger problem that you are describing, Dr_Scardo: is it not only that you are looking for a way to solo one or more staves, but to also keep them solo’d while you edit them?
If so, you’re right – Option+S won’t address that.
As far as I know - and I’m a complete beginner with Dorico - the only way to do this would be to open up the Mixer, and hit the Solo button(s) for the staves you want to work on. (I just tried that, and I was able to work with that solo’d staff – edit, create, etc – all the while maintaining it as the only staff heard during playback.)
If I’m wrong about this, I hope someone out there will correct me.
