I have a question: In Cubase 15, can the NanoKontrol Studio be selected as a MIDI remote?

Yes but in Windows the recent rollout of their newly revised MIDI driver broke the Korg Drivers (which were a mess anyway, so good riddance). What you want to do is delete the Korg drivers and use the Windows driver instead.

There is a very detailed thread here that covers this. I’d recommend reading it before making any changes.

Not officially by Steinberg. Should be relatively easy to add it using the MIDI Remote Mapping Assistant provided, though.
