Super new to DAWs and Cubase in particular. I have a few questions related to VST Instruments if I may. I installed some Spitfire LABs plugins to play with. I am using my electric piano as a controller for the VST. My issues are as follows:

Not sure how to word this, but essentially, the “monitoring” playback that occurs when I’m playing on my piano (as the MIDI controller) is not playing the same VST as has been selected in LABs. For example, I select a Grand Piano preset in LABs, but when I actually play the instrument on my keyboard, a synth sound is previewed in my headphones. However, if I record what I’m playing (the synth sound still being previewed) and then play back the recording, then it will play as Grand Piano rather than synth. Seems very strange. I’d really like to be able to have accurate playback as I play so I’m not just doing a trial and error all the time.

I added a second layer of VST. This time a cello. I just wanted a couple of notes as a sustained drone. So I played them on my MIDI controller piano, all good. But when I play back, there are a bunch of random notes (that actually sound quite good, but I certainly didn’t put them there). It’s almost as if AI has taken the VST and added notes it thought would sound good. I like it, but I didn’t create it, so I can’t use it.

In a similar vein to to Q2, notes seem to be sustained WAY longer than I want them to be. I’ll go into the piano roll, remove the notes, or shorten the track itself, but they stubbornly stick around. So despite there being visually nothing to see, notes are being played and sustained. I don’t know where they are coming from.

And finally, is there any way to add a gentle fade in/fade out without having to convert the tracks to audio? I swear I’ve been able to do this in GarageBand by just dragging the top corners down to create a fade. I want to be able to play around with the dynamics without having to convert to audio before I’m ready to do so.
Sorry for the barrage of questions! I’m just very new to this and really overwhelmed with the steep learning curve. I promise I have Googled all of the above until my brain seriously hurt and haven’t found the answers I needed. I really appreciate any help!
