So I’m transcribing a particular bird song right now which of course isn’t singing in equally tempered tuning. Is there a function within dorico that can play notes cents flat/sharp so I can figure out the exact notes being sung?

If you haven’t worked with microtones before, try out 24-EDO first and see how well it fits your purposes. More than 24 pitches per octave can get overwhelming pretty fast, and the built-in quarter-tone system includes the handy keyboard shortcuts.
