Dorico pretty much asks if I want to send a crash log each time I launch it.

Actually, in the logs of the 7 last runs I see one case where the log broke off during exporting the NotePerformer plug-in state, but all others where just fine, that means the audio engine could successfully retrieve the NotePerformer state and then shutting down properly.
Could we have a remote screen sharing session, so that I can see what is going on on your machine?
A screen-sharing session would be great. I’m in Los Angeles, but I’m usually up late so let me know if there is a day and time that works best for you. Also, app would like to use to connect to my system? Zoom, TeamViewer, AnyDesk?
