NVME M.2 SSDs for OS?

Can any hardware experts weigh in on the merit to using an M.2 SSD with NVME? These drives are supposed to get insane speeds, and I wonder if there are any potential benefits to programs and apps like Cubase, besides the obvious improvement in boot speeds. Here is the system I’m building:
