Is it possible somehow to open a specific instrument, eg Kontakt, Omnisphere etc, with a key command? I made one to “Open Instrument” dialog box- but not sure how to actually choose one of the available instruments, eg within a macro?

No, but you can use Generic Remote Device to open the Instrument of the dedicated Track/Channel.
