If I understand what you need, you would like Dorico to playback any ornament. You can proceed as follow:
-select the note with the ornament symbol, and add an extra Staff above (with right click → Staff → Add Staff above)
-in the newly created staff, write down how the ornament should be played
-select the signpost “+1 Staff” and press delete: this will delete the visualisation of the added staff, but will not delete the notes of the ornament that you wrote there and they will still play back.
-suppress playback of the original note
-if you need to edit your ornament, delete them, or add it somewhere else, you can re-add the staff above, and the written down ornament will reappear there, ready to be edited.
