I have everything connected to patchbays, is it that simple as to create a stereo in/out for my two mono eq… or do they just be stacked, in serie???

You can use a Stereo IO, and patch each one to left / right.
If you do the two “in series” then it is only two mono EQs, and only in mono in and out. You want stereo, you keep them on their own physical audio ins and outs.

Yes I know, I do not want them to be in serie of course. But are they by default routed to left/right when Creating a stereotrack, and use odd/even in/out in the patchbay?

Yes. 1/odd = Left 2/even = Right.
