Just want to make sure I’m not missing something, but any indication of a perc stick choice in the score (with playback effect) would need to be custom created, right?

Yes, I believe these do not come with Dorico by default. I have created many stick types (including mallets, brushes, etc). I think it would be helpful if there was a way in the playing techniques window to search/filter from all the different categories and quickly find to see if a playing technique exists or not… but for now it might be helpful if you go through the playing techniques editor window (under percussion) and when you type a letter it will bring you to that section alphabetically, so you can at least see what you have or not.
And likewise with the playback techniques window.
I have a feeling that part of the issue is that Bravura does not have any stick or mallet characters (SMuFL U+E770 - U+E7EF) , so any Dorico default for such a Playing Technique would require the inclusion of a secondary music font.
Creating these as custom techniques is really time consuming, but at least relatively straightforward.
I haven’t checked the font itself, but it sounds strange to me Bravura would lack these, as this font is basically the reference for the SMuFL standard.
When I made some such techniques previously I was able to find and use glyphs using Bravura. In the playing technique window select “Beaters Pictograms” (which I think is the same as SMuFL U+E770 - U+E7EF) from the dropdown:
Here’s a project which could maybe get you started to see how I’ve set them up previously. I usually duplicate playing techniques and label one text, the other glyph, so they connect to the same playback technique but I have the option of using either a glyph or text as I please. Feel free to edit and make your own.

You guys were right! No idea why I wasn’t seeing them earlier. But that reopens the question of why no playing/playback techniques using the stick type as a technique.
