I’m currently work on a piece of music that is just piano in Cubase Elements 8 using the Acoustic Grand Piano VST. When I play the track in mono the piano doesn’t sound great, maybe the best way to describe it is as a toy piano. Has anyone get any ideas how I can make it sound better?

Are you sure it’s mono? Most common is, the Instrument track is stereo. Or do you mean that the lower notes should comes from left and higher from right?
I mean if I play it back on any device that doesn’t have stereo speakers it sounds awful. If that makes sense.
