Maybe Dorico 5 has always done this, and I just don’t remember…
Changing the first 4/4 measure to a quarter note pick up using the pop-over (4/4, 1) inserted a 3 count measure after the pick up. See screenshot…
Of course, easy to remove the 3 count measure…

Did you try with insert mode on? (remember to turn it off again.)

One of the quickest ways, AFAIK: enter a cautionnary hidden 4/4 ((4/4) in the popover) at the begining of the 2nd bar. Then, Insert Mode on, Shift+B on the first bar, -3q. Then, of course, Insert Mode off!
